Delicate slices of cured Isan-style beef (Nua Dad Deaw)
served carpaccio-style, paired with a tamarind reduction, toasted rice powder, and edible flowers.

OCEAN MEETS THE HIGHLANDS
Grilled wild-caught sea bass wrapped in banana leaves,
topped with lemongrass beurre blanc and served with black sticky rice risotto
infused with galangal and coconut milk. Finished with crispy basil.

THE WARRIOR'S CUT
Dry-aged Wagyu sirloin from Australia,
grilled over Tamarind wood charcoal and served with Isann Jeaw Sauce and roasted garlic jus
Accompanied by sweet potato purรฉe with a hint of coconut and stir-fried wild mushrooms.

ROSE & BERRIES SYMPHONY
Strawberry Yogurt Gelato served with edible rose petals
(The rose will be dipped in liquid nitrogen to freeze it before serving,
allowing the guests to gently break and scatter the petals onto the dessert.)
