For Episode 7 of the Travelling Chef Series, we proudly present Chef "Kong” Chaiwongkhajorn, the trailblazing force behind Locus Native Food Lab in Chiang Rai as both Chef and Sommelier for the night.
Known for pushing the limits of Thai gastronomy, Chef Kong breaks away from convention to spotlight indigenous ingredients, foraged finds, and forgotten flavours from Northern Thailand.
But it doesn’t stop at the plate.
As a certified sommelier, he also curates each wine pairing to elevate his dishes — creating a rare, boundary-blurring experience where food and wine speak the same bold language.
Expect a 7 course dinner that fuses research, ritual, and raw creativity, paired with unexpected bottles and regional infusions that reflect Thailand’s own terroir.
