About Chef Dimitrios Moudios
Dimitrios Moudios is the chef and co-owner behind Bangkok’s Ore, named Restaurant Opening of the Year by the Michelin Guide just ten months after opening. Rooted in Greek heritage and powered by precision, his minimalist tasting menu is built around fire and water—think spring water from Sai Yok Yai waterfall and yuzu wood charcoal—transforming local organic ingredients into something quietly extraordinary. With a résumé that includes Atelier in Munich, Ernst in Berlin, and Boragò in Santiago, Moudios brings serious technique and a refreshingly stripped-back approach to the table.
About Chef Paco Ruano
One of Mexico’s most celebrated chefs, Paco Ruano is the force behind Alcalde in Guadalajara, a perennial on Latin America’s 50 Best Restaurants list. Known for marrying contemporary technique with deep Mexican roots, Paco’s cooking reflects both his classical training and the soulful, seasonal flavors of home. At Ojo, he brings his signature style to the 6-hand collaboration alongside his longtime collaborator Alonso and guest chef Dimitrios Moudios.
