Rare Michelin-calibre modern French cuisine paired with “floral cuisine” is the cornerstone of Signature Bangkok’s culinary philosophy.  Envisioned as a “journey of discovery”, the seasonal menus tell the story of each ingredient, highlighting terroir, or sense of place, and guide guests in connecting with nature and culture through gastronomy.

Signature Bangkok’s culinary team is led by former 2-Michelin star Chef Thierry Drapeau, whose legendary restaurant in the Loire Valley held 2-Michelin star status for nine consecutive years. “Floral cuisine” is an extension of Chef Thierry’s “cuisine of the soil” philosophy, an approach rooted in using the purest and best ingredients to express the flavours of the land and sea. Instead of focusing on spices, Chef Thierry compliments his plates with the delicate flavours of the region’s beautiful edible flowers and herbs. The floral and herbal notes add brightness and natural aromatics to Chef Thierry’s light, jus-based French style cooking, leading to a delightful concentration of flavours.

YTSB – Yellow Tail Sushi Bar serves cutting-edge Japanese cuisine and is the stylish destination in Bangkok for fresh sushi served in mouthwatering portions and authentic Japanese specialties.

Honouring the traditions of Japanese culinary art, YTSB upholds the most exacting sushi standards with the freshest fish, complemented by a wide selections of top sakes, including some rarely found brands. The restaurant’s extraordinarily skillful Master Sushi Chef serves the finest cuts of his high quality and well-sourced ingredients in a delightful a la carte menu and with his creative visions unleashed in our nightly YTSB Exclusive Omakase sessions, seating only ten persons every evening and offering a range of courses with the most delectable cuisine in the city.
